Quick Pickled Red Onions

One of my favorite ingredients to add color to your meals along with a bright and flavorful crunch. This is a quick pickle version, if you have time add the ingredients to a sauce pan and bring to boil, slightly cool then add to onions for a deeper red color.

INGREDIENTS

1 large red onion, thinly sliced
1/2 cups apple cider vinegar or white vinegar
1/2 cup water
1 tablespoon cane sugar
1 teaspoons kosher salt
1 teaspoon Spicemode Savory Tikka, Hot Mirchi or Golden Curry

DIRECTIONS

  1. Thinly slice the red onion. Make sure all the pieces are separated and add them to a glass mason jar.
  2. In another bowl or cup, add the vinegar, salt, sugar and seasonings. Pour the boiling water over the top and stir so that the sugar and salt dissolve.
  3. Pour the brine over the red onions and make sure they are fully saturated. If you need more, add equal parts vinegar and hot water until the onion pieces are fully submerged.
  4. Seal the jar, give it a shake and let it sit on the counter for 1 hour. Then move it to the fridge. Within 4 hours the onions should be bright pink and ready to enjoy!
