This good old fashioned dish is a staple in Indian households and certainly in the Spicemode kitchen. The Tikka and Masala really elevate the ingredients in a way that is it hard to believe that the sauces and seasonings ever came out of a jar! Perfect as a veggie-heavy dinner or served as a side.
1/4 jar Masala Sauce
2 Tbsp Tikka Seasoning
1 Head of Cauliflower
1/2 Cup Cherry Tomatoes, Halved
Red Chillies, Chopped
- Preheat oven to 400 degrees. Cut cauliflower into florets and potatoes into wedges and season with Tikka seasoning.
- Quickly roast cauliflower and potatoes and then sautee in a pan with the Masala Sauce and the tomatoes.
- Let flavors absorb and finish off with fresh scallions, cilantro and a generous squeeze of lemon juice.
