Skillet Golden Curry Chicken
- 2 pounds chopped chicken thighs
- 1 sliced onion
- 2 tbsp Golden Curry
Heat 2 tablespoons oil in a deep skillet over medium high. Add the chicken and cook until golden brown all over.
Add a sliced onion and toss to combine everything. Add a few more shakes of Golden Curry if you want a more intense flavor.
Pour in 3 cups water and bring to a boil. Reduce heat to low and simmer for 30-40 minutes. Liquid should reduce by about half. Taste and season once more. You can also add a can of crushed tomatoes before simmering but I don’t like to lose that golden color.
Serve with cooked basmati rice or naan. Yum!!!! Easiest midweek meal EVER!
