Curry Miso Butter Mushrooms
1 tbsp coconut oil
1 tbsp Golden Curry
2 lbs crimini, button or shiitake mushrooms
3 tbsp butter, softened
2 tbsp white or red miso paste
2 garlic cloves, minced
1 tsp sesame oil
Sesame seeds, scallions for garnish
1. Heat oil in skillet, add mushrooms and cook, stirring occasionally, until the mushrooms are rich, brown color all over, about 15 minutes.
2. Make miso butter by combining miso paste, softened butter and Golden Curry
3. Once the mushrooms are cooked, add the Golden Curry miso butter and cook for an additional 2 minutes. Take off heat, drizzle with sesame oil, sesame seeds and scallions.
