Spicy Peppers & Onions
Peppers complement other peppers in this easy side dish that can be enjoyed in a variety of ways.
Ingredients:
- 3-4 different peppers (bell, fresno, poblano, jalapeno, etc), seeded and sliced lengthwise
- 1 small yellow onion, sliced
- 4-6 cloves of garlic, sliced
- ½ c Vindaloo sauce
- Chopped fresh herbs
Mode:
- Heat oil over extra high heat in a large saute pan
- Add garlic and brown 1-2 minutes
- Stir in onions and peppers, sauté over high flame until slightly brown and brightly colored
- Toss peppers with Vindaloo and continue to cook until fragrant
Variations:
- Serve on brats or your burgers for your next grill day
- Combine with cooked farfalle, fresh spinach, and red wine vinaigrette for a simple, healthy pasta salad
