The addition of spoonfuls of Vindaloo Cooking sauces add layers of flavor. Great as a side dish to a steak or as a main with a warm naan.
1. Add oil to a hot pan and sauté mushrooms, until slightly browned and reduced in size. Season the mushrooms with a sprinkle of salt and some grinds of black pepper.
2. Next lower heat and stir in spoonfuls of Vindaloo cooking sauce until nicely coated and fragrant. Add coconut milk and simmer gently, until mushrooms are tender and sauce has reduced. Add chopped fresh spinach, stir for a minute.
3. Garnish with sliced scallions and serve as a side dish along with your favorite grilled protein.
