Magic Masala

Mattar Paneer

Mattar Paneer

Mattar Paneer

My younger brothers favorite dish when he visits home. Mom used to make it from scratch but now she uses a jar of Spicemode. The trick to a depth of flavor is to cook the peas for at least 15 minutes. The vibrant green color fades but it is replaced with lots of flavor.

INGREDIENTS

1 Jar Magic Masala Sauce
1 lb frozen peas
8 ounces paneer
Cilantro, Chopped
Lemon

DIRECTIONS

prep the paneer

Add a couple tablespoons of oil to a frying pan. Cut and cube the panner the way you like. Add it to the hot oil and cook, turning every minute until browned. You can also skip this step and tear the panner into pieces to use in the dish. Either way will taste great.

make the curry

Add jar of Magic Masala to a tablespoon of oil in a high sided pot over medium high heat. Once the sauce warms through add the bag of frozen peas and cook until the peas start to defrost. Fill jar with water and add to the pot, bring to a simmer, cover and cook for 10 minutes, stirring occasionally.

Uncover and taste the peas, it will be soft and the flavor of the sauce should come through. Add the panner to the pot and continue to cook until the panner is warm and also soft. Finish with a squeeze of lemon and handful of cilantro.
