Cauliflower strikes again! The charred flavor complements the spinach beautifully in this dish, making it a simple yet filling and nutritious meal. The goal is to get a nice char on some of the veggies so don't be scared to turn up the heat! And instead of throwing away the cauliflower stalks, slice thin and add to dish for a contrast in texture.
INGREDIENTS
Tikka Seasoning 1 Medium Cauliflower, Cut into Florets 1/2 Cabbage, Chopped 3 Cups of Baby Spinach Lemon Cooking Oil of Choice (We love Ghee for this recipe)
DIRECTIONS
Cut up cauliflower into even size florets, slice the stems and coarsely chop up cabbage.
Heat up ghee or butter in a sauté pan, add vegetables and a generous sprinkle of our Tikka seasoning.
After the veggies browned add a splash of water and cover the pan until tender. Finish with handfuls of baby spinach and squeeze of lemon.
